Create A Signature

Evolution > Edit > Preferences > Composer Preferences > Signature tab. Click Add, edit your signature then save it.

Make It Automatic

Evolution > Edit > Preferences. In Mail Accounts, select the account for which you want the signature for. In the account editor, on the Identity tab choose your signature from the list.
